Özet

Filtration is a unit operation that involves the separation of insoluble materials from a solid-liquid mixture using mechanical or gravity force. The solids become trapped in the porous media, forming a layer known as the filter cake. Gravitational force or mechanical force can drive the separation of the two phases. To ensure the flow of filtrate through the medium, pressure is applied upstream or a vacuum is applied downstream. Mechanical filtration methods can be used at different steps in the production process of beverages. For example, a coarse filtering process may be used to clean the raw beverage. Then, by a fine filtration process, unwanted solids can be completely removed. Mechanical filtration methods increase the clarity of beverages while also preserving taste and aroma. These methods are important to improve the quality of beverages and provide a better experience for the consumer. In this chapter, the importance of the filtration process in the beverage industry is discussed. Additionally, various types of filtrations used in the industry, influencing factors, and equipment used in the industry have been examined.
